DRY AGED
A maturing cellar is a refrigerated cabinet that allows products to be stored and matured, especially beef. This device improves the taste of the food. It's the same process as aging in a wine cellar or for maturing cheese, which can be done with certain types of aging cabinets. To preserve and increase the quality of meats, the use of a maturing cellar is advantageous. It allows in particular to mature the meat and to make its flavors and aromas more qualitative. A ripening cabinet gives beef more color and makes it more luscious.
